- 2 Tbsp coconut oil
- 1 unpeeled eggplant
- 3 tomatoes
- 3 garlic cloves
- 1/2 large yellow onion
- 2 tsp. Dried basil
- 1/3 cup grated parmesan
- Salt to taste
1)Heat oven to 350 degrees. Slice eggplant into 1" thick round slices.
2)Bake covered in a lightly oiled glass baking dish for 10 to 15 minutes, or until tender.
3)Finely chop the tomatoes and onion. Mince garlic cloves. Combine tomatoes, onion, garlic, basil, coconut oil and salt.
4)Scatter tomato mixture over eggplant slices. Sprinkle with parmesan.
5)Bake uncovered until cheese is golden, 15 to 25 minutes.
