Zippy Nippy Tofu Squash Bake

Ingredients:
  • 3 med. butternut
  • 6 med. tomatoes, roughly chopped
  • 1 pkg herbed tofu, crumbled
  • 6 garlic cloves, roughly chopped
  • 1 onion, roughly chopped
  • Pepper to taste
  • 1 c. grated cheddar cheese

Directions:

1)Slice the tops off the squash and scoop out the flesh. Chop the flesh and set it aside.
2)In a frying pan, saute the garlic, onions and squash flesh with pepper for 5-10 minutes.
3)In a mixing bowl, combine the sauteed mixture, tofu, tomatoes, and 1/2 the grated cheese. (At this time you can start to preheat the oven at 400 F.)
4)Stuff the squash with this mixture and top with the remaining cheese.
5)Bake for 50 min. at 400ºF.
