Sweet Potato Pie

  • 2 1/2 c cooked, mashed sweet potatoes
  • 1/4 c sugar (brown or white)
  • 1/2 tsp salt
  • 1 tbsp butter or margarine, melted
  • 3 whole eggs
  • 3/4 c milk
  • 2/3 c maple syrup
  • 1/2 tsp ground allspice
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • 1 tsp vanilla extract
  • whipped cream (optional)

Combine sweet potatoes, sugar, salt, spices, and butter or margarine in a large mixing bowl; stir well, and set aside. Beat eggs; gradually add milk, syrup, and vanilla, stirring until blended.
Slowly stir egg mixture into sweet potato mixture, and pour filling into pastry shell. Bake at 425 for 10 min.; reduce heat to 325, and bake for 1 hour and 5 to 10 minutes or until a knife inserted inserted in the centre comes out clean.
Let cool; serve with whipped cream, if desired. Mmmm.
