Easy Eggplant Parmesan

  • 1 large eggplant
  • 8 ounces mozzarella cheese, sliced
  • 1 egg, beaten
  • 1/2 cup grated parmesan cheese
  • 1 can tomato sauce
  • bread crumbs

1)Cut eggplant into 1/4" slices.
2)Dip eggplant slices in the egg and then roll them in bread crumbs.
3)In a frying pan, at med-high heat, brown all of eggplant.
4)Spread 1/2 the tomato sauce in the bottom of a baking dish. Layer 1/2 the browned eggplant slices, mozzarella cheese and parmesan cheese.
5)Cover with sauce and do another layer.
6)Bake at 375 degrees for approx. 30 minutes
