Winter Squash Gratin

Ingredients:
- 1 tsp coconut oil
- 3 medium yams, peeled and thinly sliced
- 1 squash
- 1 clove garlic, halved
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 chopped red onion
- 1 bunch kale, chopped
- 1/2 cup vegetable broth
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese

Directions:
1) Heat oven to 375 F.
2)Cut squash in half, stem to stem. Discard seeds. Peel, then cut crosswise into 3/8-inch-thick slices.
3)Rub cut side of garlic on bottom and sides of a shallow baking dish; rub dish with coconut oil.
4)Cook onion in fry pan until soft. Transfer to bowl. Add kale and cook until wilted, 3-5 min. Squeeze out excess liquid. Add a pinch of salt & pepper.
5)Arrange 1/2 the squash slices, overlapping slightly, in prepared dish. Spread half the kale mixture over top. Arranged potato slices over top.
6)Layer top with remaining kale and squash.
7)Pour in broth. Cover and bake 45 min., until squash is tender.
8) Remove cover, increase oven temperature to 425 F.
9)Sprinkle cheeses on top; bake uncovered 8 to 10 min, until golden brown.
