Deserted Island Smoothie

Why is it called a Deserted Island Smoothie? Because if I was stuck on a deserted island with a blender (and a freezer), these are the fruit trees and berry bushes I'd want to be stuck with! This recipe is given in 2 different ways, so that you can choose how you want to present it.

Ingredients:
- 1 1/4 cup coconut milk
- 1/2 Mango, peeled, seeded and cut into chunks
- 1/2 banana, peeled
- 1 c. fresh or frozen blueberries
- 2 tsp lemon zest

Directions:
Quick & Easy Directions:
1) Place fruit in blender with a little bit of the coconut milk and pulse until it begins to get smooth.
2) Add remaining milk, turn blender on and mix until desired consistency is reached.
Artful Presentation Directions:
1) Place banana and mango in blender with a little bit of the coconut milk and pulse until it begins to get smooth.
2) Add 1/2 of the remaining milk and blend until desired consistency is reached. Pour into glass or cold bowl and keep cool.
3) Place blueberries and lemon zest in blender with a little bit of the coconut milk and pulse until it begins to get smooth.
4) Add remaining milk and mix until desired consistency is reached. Pour into glass in desired pattern.
This is beautiful if layered, or try pouring both colours into the glass at once and lightly stir to marble.
