Coolin' Summer Smoothie

Ingredients:
  • 1 large pink or ruby red grapefruit
  • 1/2 cup water
  • 1-2 kiwis (depending on size)
  • 1/2 cup plain yogurt
  • 1 tbsp fresh mint, chopped (optional, can be a garnish)

Directions:

1)Peel and segment grapefruit, removing all seeds. Watch the pith (the white stuff). While it does hold many nutrients, it also increases bitterness.
2)Peel the kiwi, remove center "spine" if desired.
3)Place grapefruit, kiwi and juice in blender. Add water, blend until smooth then add remaining ingredients and blend again until desired consistency is reached.
