Ingredients:
- 1/2 cup young coconut meat
- 1 large apple
- 1/2 inch fresh ginger root, peeled
- 2 carrots
- 2 tsp. chia seeds
- 1/2 cup almond milk
- water as necessary

Directions:
- Soak chia seeds in almond milk for 15 minutes.
- Blend coconut meat with the chia mixture and a bit of water until smooth. Add the apple, then the ginger, then the carrots to the blender. Blend until creamy, adding water if necessary.
