Egg Scramble Breakfast Burrito
A great option for a hearty, well balanced breakfast. Serve these to fuel up your kids for school!

- 4 eggs
- 5 mL (1 tsp) butter or vegetable oil
- 60 mL (¼ cup) salsa
- 60 g (½ cup) cheddar cheese, grated
- 2 medium (20-cm) whole wheat tortillas
- Handful of spinach
In a large bowl whisk together the eggs.
In a large saucepan, heat butter over medium heat and add egg mixture. Continue to heat, stirring occasionally, until the desired texture is reached.
Divide cooked eggs onto tortillas and top with cheese, salsa and spinach. Roll them up and enjoy!
