Zesty Lemon Dressing

- 4 Tablespoons olive oil
- 1 Tablespoon fresh Tarragon - chopped
- 1 Tablespoon Dijon Mustard
- 1 Lemon zest and juice
- pinch Sea Salt
- pinch freshly ground pepper
- Optional – splash of white vinegar
1)Whisk together dijon, and lemon zest.
2)Slowly whisk in ½ of the oil, incorporating completely.
3)Add the juice of the lemon, mix well, and then slowly add the remaining oil.
4)Stir in Tarragon and season with salt and pepper.
