Mango Vinaigrette

Ingredients:
- 1 teaspoon lemon juice
- 1/2 cup apple cider vinegar
- 2 teaspoons mustard
- 1/2 teaspoon minced garlic
- 1 tbsp maple syrup
- 1 cup peeled, ripe mango pieces
- 1/2 cups olive oil
- 1/8 tsp curry powder
- 2 tablespoons thinly sliced onion
- sea salt to taste

Directions:
1)Put the vinegar, mustard, garlic, maple syrup, lemon juice, and 1 cup ripe mango in a blender.
2)Blend at medium speed. With the motor running, remove the top and slowly drizzle in the olive oil. The mixture should be thick and emulsified.
3)Fold the curry powder and diced mango into the dressing. If the dressing is too thick, thin with water.
