Marinated French Lentil & Kale Salad

Eat this salad when you want to feel like you have superpowers! GRAIN French Lentils, kale, and red peppers make a refreshing and filling combo that taste amazing. This salad comes together quick and uses my soak and steam method for lentils that guarantees perfectly cooked lentils every single time.

Ingredients:
  • 2 cups cooked French Lentils
  • 1 bunch of Lacinato kale, sliced thinly
  • 1 red bell pepper, seeded and chopped finely
  • 1 cup Pistachios, toasted
  • 1 cup feta, cubed
  • 1/4 cup Olive Oil
  • 1/4 cup white wine vinegar
  • 1/2 tsp salt
  • 2 tbsp dijon mustard
  • 1 tbsp sugar or maple syrup
  • 1/2 cup fresh herbs such as cilantro, basil, or parsley

Directions:

Pre-cook your French lentils using our soak & steam method. Soak the French Lentils for 4-20 hours, then drain and rinse. Steam in a vegetable steamer basket for 20-25 minutes, until tender but still firm. Remove from the steamer and allow to cool slightly. Toss with olive oil to coat.

Combine cooked French lentils, kale, red pepper, pistachios, fresh herbs, and feta in a mixing bowl. In a small bowl, whisk together the oil, vinegar, mustard, sugar or maple syrup, and salt. Pour over the salad ingredients and mix well. Allow to marinate for a minimum of 30 minutes before serving, if possible. This will allow the kale to wilt and soften
