Roasted Radishes

  • 2-3 bunches radishes with greens, washed and separated
  • 2 tbsp extra-virgin coconut oil
  • Salt
  • Freshly ground pepper
  • 2 tbsp lemon juice

1)Preheat oven to 500 degrees.
2)In an oven-safe skillet sauté the radish roots, sprinkled with salt & pepper, in warmed oil for about 2 minutes. Turn them occasionally so they are glazed all over and browned in spots. Move the skillet to the oven and cook for 15 minutes until tender inside and slightly crisp outside (turn once or twice).
3)Return the skillet to the stove top on medium heat. Add the radish greens, cooking until wilted (about 2 more minutes). Add the lemon juice, stir and taste. Season if needed. Serve immediately.
