  • 1 package buckwheat soba noodles
  • 4 scallions thinly sliced (about 1 cup)
  • 1/4 C vegetable oil

  1. Boil water and add soba noodles, stirring until fully immersed. Bring water back to the boil then reduce temperature to simmer and cooked for approx 5-8 minutes or al dente (you will cook them again, so you don't want them to get mushy)

  2. While noodles are simmering, prepare a large bowl of cold water. When noodles are done, drain them and put them into the cold water. Wash noodles in cold water and then drain them and set aside.

  3. In a large saucepan, heat the oil over medium heat. When hot, add the scallions and saute them for 30 seconds. Add the cooked soba noodles and stir until warmed through.

  4. Remove the pan from the heat and place the noodles in a large bowl.
