Braised Fennel with Ginger

- 1 bulb fennel, trimmed, cleaned and cut in matchsticks
- 2 tbsp. coconut oil
- 1 c. onions, thickly sliced
- 1/2 tsp. fresh ginger
- 1/2 tsp. salt
- 1 1/3 cup water
1)Put the fennel in a wide, lidded pan with the onions. Sprinkle over the spices and salt, then the oil and finally pour over the liquids.
2)Bring to a boil, cover and simmer for 20-30 minutes or until the fennel is cooked without being mushy.
3)Stir once or twice during the cooking to make sure the spices get well distributed.
