Holiday Mashed Turnips

- 2 tbsp coconut oil
- Pepper to taste
- 2 large turnips about 1.5 lbs
- 1/4 tsp ginger
- 1/4 tsp cinnamon
- 6 1/2 c apple juice
- 1/2 tsp. salt
1)Put 6 c. apple juice on to boil. While it is heating, wash and peel the turnips.
2)Cut them into 1 inch cubes. Place them in the boiling apple juice (reserve 1/2 cup of the juice for later use.). Add salt to juice, lower heat and simmer until very tender.
3)Drain off liquid, and add remaining ingredients to the turnips and beat with electric mixer or processor on high until smooth.
4)Preheat oven to 350F. Place in oven-safe dish to bake for 1/2 hr or until moisture has cooked off.
