- 4 tortillas
- 2 tablespoons coconut oil
- 1 cup chopped white onion
- ½ cup salsa, plus additional
- 2 garlic cloves, chopped
- 1 cup grated Vegan Cheese
- ¼ cup chopped fresh cilantro
- 1 can black beans, rinsed, drained
- 1 teaspoon chili powder
1)Preheat broiler and put tortillas in single layer on baking sheet. Brush with oil and broil until toasted. Set aside.
2)Heat 1 tablespoon oil in large pan over medium-high heat. Add onion and sauté until beginning to brown.
3)Season with salt and pepper.
4)Add 1 tablespoon oil to skillet and add beans, ¼ cup salsa, garlic and chili powder.
5)Using potato masher, crush until beans are coarsely mashed. Season with salt and pepper.
6)Stir in ¼ cup salsa and spread over second tortilla. Sprinkle cheese over third tortilla. Leave fourth plain.
7)Broil tortillas until cheese melts. Transfer black bean tortilla to plate, sprinkle ¼ cup chopped cilantro over.
8)Top with cheese. Cut into 4 wedges and garnish with salsa and cilantro sprigs.
