Ingredients:
  • 1/4 cup coconut oil
  • dash of chili peppers
  • 2 cups green beans, chopped
  • 1 head of garlic, minced
  • dash of cumin
  • 6 yellow onions, diced
  • 3 leeks, diced
  • 1 whole celery, diced
  • 1.5 lb carrots, diced
  • 1 head broccoli
  • 1 head cauliflower
  • 4 zucchini, diced
  • 4 patty pan squash, diced
  • 2 cups peas
  • 12 tomatoes, diced
  • 3 cans chick peas
  • 1 bunch chard, shredded
  • 1 bunch kale, shredded
  • rosemary
  • basil
  • oregano

Directions:

1)Sauté onion, garlic, leek, chili & cumin in coconut oil until fragrant and translucent.
2)Add celery & carrot, and sauté until the celery shimmers. Add cauliflower and broccoli, stir well, cover and let simmer for about 10 minutes.
3)Add zucchini, patty pan, beans, peas, tomatoes & chickpeas. Stir well and cover for about 20 minutes.
4)Add kale, chard & herbs. Cover for another 10 minutes until greens wilt.
