Cardamom Pea Soup

- 2 tbsp coconut oil
- 1 large onion, coarsely chopped
- 2 tsp minced peeled fresh ginger
- 3/4 tsp ground cardamom
- 800-900 ml veggie broth
- 1 1/2 c peas
1)Cook oil, onion and ginger on medium-low, stirring until onion is soft.
2)Add cardamom, and continue stirring, 30 sec.
3)Add broth and bring to a boil. Add peas and simmer, uncovered, until very tender (about 10 min).
4)Purée soup until smooth (caution! Hot liquid).
5)Return to sauce pan to reheat and season with salt and pepper.
