Ingredients:
  • 2 cups water
  • 1 cup rice -- cooked
  • 1 lb kidney beans, dry
  • 1/2 cup celery -- diced
  • 1/2 cup zucchini-- diced
  • 1/2 cup carrots -- diced
  • 1/2 cup mushrooms -- diced
  • 1 onion -- diced
  • 1 tsp basil, dried
  • 1 tsp parsley, dried
  • 1 bay leaf
  • 3 clove garlic -- minced
  • 1 tsp black pepper -- ground

Directions:

1)Soak beans over night.
2)Drain beans and add to crockpot. Cook at high for 2 hours.
3)Add the vegetables, herbs and spices and cook on low for 5 to 6 hours until the carrots are tender.
4)Add rice and cook for one more hour.
