Ingredients:
  • 2 Tbsp coconut oil
  • 1 tsp ground turmeric
  • 1 c red lentils
  • 4 c water
  • 2 onions, chopped
  • 2 cloves garlic
  • 2 tsp cumin seeds
  • 2 tsp grated root ginger
  • 1 tsp garam masala
  • 1 tsp salt
  • 2-3 tomatoes, finely chopped

Directions:

1)Boil lentils until tender (30 min). In a pan, heat oil and cumin seeds, ginger and tumeric over med heat for 1 min. Add onion and garlic, cook until onion is tender (10 min). Stir in garam masala and salt and remove from the heat.
2)Add tomatoes and the onion mixture to the lentils, and simmer together for 5 min.
3)Boil for thickening, or add water to thin - Aim for spaghetti sauce consistency).
4)Serve immediately.
