Sweet Potato Soup

- 1 tbsp coconut oil
- 1/4 tsp pepper
- 4 cups broth
- 2 tbsp minced fresh parsley
- 1 onion chopped
- 2 cloves garlic, minced
- 3 sweet potatoes peeled and cubed (2 lbs;)
- 1/4 tsp salt
1)In large sauce pan, heat oil over medicum heat, saute galic,onion, salt and pepper until softened, about 3 mins.
2)Add sweet potatoes and stock. Bring to boil. Reduce heat, cover and simmer until potatoes are tender, about 20 mins.
3)Puree soup until smooth. Return to clean saucepan and heat through.
4)Top with chopped parsley
