Ingredients:
  • 1 tbsp coconut oil
  • 2 large yams
  • 2 cups broth
  • ½ bunch arugula
  • ground pepper
  • 1 onion – sliced
  • 1 tsp thyme
  • 1 tsp fresh dill
  • salt

Directions:

1)Lightly brown onions in oil, add thyme and cook for one minute.
2)Add yams with stock and simmer until soft.
3)Puree the soup base.
4)Put greens and dill in each bowl and ladle over hot soup.
