  • 1/2 cup young coconut meat
  • 1 large apple
  • 1/2 inch fresh ginger root, peeled
  • 2 carrots
  • 2 tsp. chia seeds
  • 1/2 cup almond milk
  • water as necessary

  1. Soak chia seeds in almond milk for 15 minutes.

  2. Blend coconut meat with the chia mixture and a bit of water until smooth. Add the apple, then the ginger, then the carrots to the blender. Blend until creamy, adding water if necessary.
