Mediterranean Vegetable Bolognese

- coconut oil
- 1/3 cup Tomato paste
- 1 cup of water
- 1 cup diced tomatoes
- 1/2 medium onion, diced
- 1/2 eggplant, cubed
- 1/2 zucchini, cubed
- 1/2 green pepper cubed
1)Sauté the onion, eggplant, zucchini and green pepper with coconut oil in a skillet over medium high heat until soft.
2)Stir in tomato paste. Slow boil until thick. Add the tomatoes and the cooked veggies. Let stew 10 minutes on a medium low heat.
