Spanish Potato Onion Soup

  • 2 tbsp. coconut oil
  • 1/4 c. dry sherry
  • 4 c. thinly sliced onion
  • 4 c. water
  • 4 c. paper thin slices of potato
  • 2 tsp. paprika
  • 1/2 tsp. thyme
  • 1 tsp. salt
  • 1/4 tsp. ground black pepper
  • Pinch of cayenne

1)In a stock pot on medium heat, sauté onions in oil, stirring occasionally.
2)In a separate pan, bring water to a boil. When onions are translucent, add paprika and thyme. Sauté for a minute.
3)Pour boiling water onto onions and add potatoes, sherry, salt and pepper. Return to a boil, lower heat and simmer, covered, for about 10 minutes. Cook until potatoes are tender.
4)Garnish with pinch of cayenne.
