Celeriac Pear Soup

- 1 tbsp. coconut oil
- 1 c. minced onions
- 2 cloves garlic, mined
- 1 bay leaf
- 1 medium celeriac, peeled & diced
- 3/4 c. pear juice
- 3 1/2 c. vegetable broth
- 1 large peeled potato, peeled & chopped
1)Sauté onion in oil for about 5 minutes, add garlic & bay leaf. Cook for about another 10 minutes. Add the remaining ingredients and bring to a boil.
2)Reduce heat and simmer for 30 minutes.
3)Remove bay leaves and puree soup using either a hand blender, blender or food processor. Season with salt & pepper and serve hot.
