Curried Cauliflower and Yam

- 4 tsp coconut oil
- 1 tsp coriander seeds or powder
- 1 tsp. Mustard seed
- 1/2 an onion sliced
- 1 tsp. curry paste
- 2 cups cauliflower florets cut in bite size pieces
- 2 cups yams
- 3/4 cup water
- 1/4 tsp Salt
1)Heat mustard seeds in oil over medium heat in a covered pot or skillet.
2)As soon as seeds have popped (1 to 2 minutes) stir in onion, curry paste and corriander.
4)Sauté for 3 to 4 minutes.
5)Stir in cauliflower, yams, water and salt and bring to a boil.
6)Simmer for 15 minutes or until the vegetabls are tender-crisp.
