Curried Cauliflower and Yam

  • 4 tsp coconut oil
  • 1 tsp coriander seeds or powder
  • 1 tsp. Mustard seed
  • 1/2 an onion sliced
  • 1 tsp. curry paste
  • 2 cups cauliflower florets cut in bite size pieces
  • 2 cups yams
  • 3/4 cup water
  • 1/4 tsp Salt

1)Heat mustard seeds in oil over medium heat in a covered pot or skillet.
2)As soon as seeds have popped (1 to 2 minutes) stir in onion, curry paste and corriander.
4)Sauté for 3 to 4 minutes.
5)Stir in cauliflower, yams, water and salt and bring to a boil.
6)Simmer for 15 minutes or until the vegetabls are tender-crisp.
