Jamaican Yam Casserole

- 3 tbsp toasted, flaked coconut
- 2 large yams
- 1 medium banana thickly sliced
- 1/2 c orange juice
- 1/2 tsp pepper
- 3 tbsp pecans, coarsely chopped
- 1/2 tsp salt
1)In a greased 1 quart casserole dish, arrange yams and bananas in layers.
2)Sprinkle each layer with salt and pepper. Pour in orange juice. Top with peacans and coconut.
3)Bake uncovered at 350 degrees for 30 minutes. Check after 20, of yams are still not done and juice is gone add 1/4 c water and recheck 10 minutes later.
