Veggie Nut Burgers

- 1/4 c coconut oil
- 1 tsp nutritional yeast (optional)
- 1 c almonds ground
- 1 onion; peeled and chopped
- 1 celery stalk; finely chopped
- 1 tsp herbs de Provence
- 1 tbsp whole wheat flour
- 1/2 c vegetable stock
- 1 tbsp soy sauce
- 1 c cashews, ground
- 2/3 c fresh breadcrumbs
1)Melt the coconut oil in a large saucepan and sauté the onion and celery for 10 minutes. Stir in the herbs and flour and cook for a further 1-2 minutes.
2)Add the stock and stir until thickened, then add the soy sauce, nutritional yeast, nuts, breadcrumbs and salt and pepper.
3)Leave the mixture to cool, then form into 6 flat burgers. BBQ or sauté in a lightly oiled pan for 3 to 5 min. on each side.
