Sweet & Spicy Carrot Soup

- 1 tbsp lemon juice
- 6 cups thin sliced young carrots
- 3 small onions
- 1/8 tsp garlic minced
- 1-1/2 teaspoon basil
- 1/4 tsp cinnamon
- 1 tbsp tamari
- 3 tbsp fresh minced ginger
- 4 cups of water
1)Put sliced carrots, garlic and minced onions into 4 cups of water. Bring to a barely boiling state. Immediately drop temperature and simmer until tender (20 to 30 minutes).
2)Add basil, cinnamon, lemon juice, tamari and ginger. Simmer for another 5 to 8 minutes.
3)Transfer mixture to a food processor or blender. Blend.
