- 1 tbsp coconut oil
- 1 lg onion, peeled
- 1/2 lb (8oz) snap peas
- 1 tbsp grated ginger
- 1 red pepper, cut into strips
- 1 garlic clove, crushed
- 1 tbsp tamari sauce
- 1 tsp sugar
- a pinch of salt
- 1 tbsp water
1)Cut the onion in half and slice thinly in rings. Remove the ends and threads from peas.
2)Heat the oil in a frying pan or wok. Add the onion, ginger and red pepper and stirfry over high heat 4-5 min. or until the vegetables are just tender. Add the garlic and peas and stir fry for 2 min, or until the peas brighten.
3)Add the tamari, sugar, salt and water, and mix through. Serve immediately.
