- 2 tbsp coconut oil
- 2 c broccoli florets
- 3 large oranges
- 2 large tomatoes, chopped
- 1 c diced sweet onion
- 1/4 c sliced fresh basil
- 1 1/2 tbsp red wine vinegar
- 1 1/2 tsp grated orange peel
1)Steam broccoli slightly - 3 min or less.
2)Zest orange and put aside. Cut and peel oranges over small bowl to catch juice, cut between membranes to release segments. Cut each orange segment crosswise into 3 pieces. Add orange pieces, tomatoes, onion, and fresh basil to bowl with broccoli.
3)Add oil, vinegar and orange zest to collected orange juice. Pour vinaigrette over broccoli mixture and toss.
