Seared Salmon with Orange Glaze

- 1/4 c white wine
- 3 tbsp sherry
- 4 8 oz salmon fillet
- 1 tbsp coconut oil
- 3 tbsp low-sodium soy sauce
- 1 tsp orange zest
- 1/2 tsp grated fresh ginger
- 2 slices orange
1)Preheat oven to 400°F. Sear fillets in the oil in a large, very hot skillet, 1 minute per side. You should hear the fish sizzle. 2)Remove fillets and transfer them to a glass baking dish. Drizzle with soy sauce and wine. Bake for 10 minutes.
3)Meanwhile, heat orange juice, zest, sherry and ginger together in a small saucepan on med-high until reduced by half. Add orange slices, and stir once or twice, until the sauce becomes thick. Remove from heat, drizzle the sauce over the fish, and serve.
