Ingredients:
  • 1 lb yams, washed & quartered
  • 1 tbsp coconut oil
  • 1 tsp fennel, crushed
  • 2 cups spinach, cleaned & shredded
  • 1/4 lb oyster mushrooms
  • 1 clove garlic, minced
  • 1 tsp marjoram

Directions:

1)Preheat oven to 400ºF.
2)Combine oil, garlic, fennel & marjoram. Season according to taste.
3)Add yams, spinach & mushrooms. Toss with oil & seasonings.
4)Roast for 45 minutes - 1 hour until yams are easily pierced with a fork
