Slow Cooker Barley Almond Milk Porridge

- 1/2 cup pearl barley
- 1 cup almond milk
- 2 1/2 cups water
- 2 tbsp. blueberries
- 1 tbsp. coconut flakes
- 1 tbsp. almonds, chopped
- 1/2 cup coconut milk (optional)
- maple syrup (optional)
- Rinse barley. Add to slow cooker with almond milk and water. Cook for 25-30 minutes.
- Stir in goji berries, and cook for 5 more minutes, or until berries have softened.
- Top porridge with coconut flakes, almonds, coconut milk, and maple syrup. Serve.
