1)Boil potatoes in their skins until just done. 2)The potatoes should be firm enough when cooled to allow you to remove their skins and grate them into a mixing bowl. 3)Add the chopped onions, sour cream, and 1/2 c of the cheddar cheese. Season with salt and pepper to taste. 4)Transfer the mixture into a large, shallow, oven-proof dish (such as a lasagna dish). Top with the remaining cheese. Cover and chill in the refrigerator overnight. 5)Preheat the oven to 350F degrees and bake for about 45 minutes until the cheese on the top has become golden and bubbling. 6)Serve immediately. |
