1)Chop onion and mince garlic. Break broccoli into florets and peel and cut stalks into 5 cm pieces. 2)Melt oil in a large saucepan or Dutch oven. Saute onion and garlic until softened, about 5 minutes. Add broccoli and stock. Cover and simmer until softened, about 12 minutes. 3)Puree mixture in pan using hand blender. Stir in milk and salt and pepper to taste. Heat through, stirring often. |
