Beautiful Blueberry Rice Pudding

Ingredients:
  • 2-3 cups (500-750 ml) cooked grains (e.g.: brown rice)
  • 1 c (250 ml) walnuts, chopped
  • 1 c (250 ml) raisins
  • 1 1/2 cups (375 ml) rice milk
  • 1 tsp (5 ml) cinnamon
  • 1 Tbsp (15 ml) vanilla

Directions:
This is also great for a snack or dessert, and it’s easy to make.

Don’t hesitate to add seasonal fruit, it tastes great and counts towards your 5 - 10 servings of fruits and vegetables per day

1) After cooking the rice, return grains to a saucepan.

2) Add all of the above ingredients to the rice, and cook on low heat for 15 min, stirring frequently to prevent sticking.

3) Remove from heat. Serve warm or cool. Keep covered in the fridge.
