1)Sauté onion in oil in non-stick skillet until tender; stir in rice and brown slightly. 2)Stir in broth, bay leaves and pepper; bring to a boil. Cover tightly and reduce heat; simmer for 45 minutes. 3)Remove from heat; stir in apples and parsley and cranberries. Serve warm or cold. |
