Summertime Pork Ribs

Ingredients:
  • 2 racks of baby back pork ribs
  • 2/3 cup fresh rosemary leaves, stems removed (from about 2 large bunches)
  • 8 - 10 large garlic cloves
  • zest from 1 large lemon
  • 1/4 cup coconut oil
  • 4 Tbsp balsamic vinegar
  • Pinch of Sea Salt
  • Ground Pepper to taste

Directions:
- This is best created in a charcoal grill, but will also work on a gas bbq or in the oven.-

1)Put pork on an oven-safe tray with relatively high sides or create a drip tray out of foil.
2)Blend rosemary, garlic, lemon and oil with some salt and pepper until thick and almost smooth. Spread over ribs, drizzle lightly (yet fully) with balsamic and let sit while oven or grill heats. If desired, add your head of garlic to the pan/tray and cover that with foil.
3)Heat oven or grill to 325 degress. Grill pork for 1 hour, then turn over and grill for another 15 minutes. Check the doneness of the meat, if not ready return to the heat for another 10-15 minutes.
