1)Preheat oven to 400 degrees. 2)Toss all the ingredients together except tomato sauce. Place in oven safe baking dish and bake for 25 minutes. Turn (stir) contents half way through. Fennel should be tender and starting to brown and garlic should have softened. 3)Stir tomato sauce into roasted vegetables and return to oven for another 15 minutes at 350 degrees, stir every 5 minutes. |
