Slow Cooker Barley Almond Milk Porridge

 Servings:  2 people  

Ingredients:
  • 1/2 cup pearl barley
  • 1 cup almond milk
  • 2 1/2 cups water
  • 2 tbsp. blueberries
  • 1 tbsp. coconut flakes
  • 1 tbsp. almonds, chopped
  • 1/2 cup coconut milk (optional)
  • maple syrup (optional)

Directions:
  1. Rinse barley. Add to slow cooker with almond milk and water. Cook for 25-30 minutes.

  2. Stir in goji berries, and cook for 5 more minutes, or until berries have softened.

  3. Top porridge with coconut flakes, almonds, coconut milk, and maple syrup. Serve.
