Slow Cooker Barley Almond Milk Porridge

Ingredients:
1/2 cup pearl barley
1 cup almond milk
2 1/2 cups water
2 tbsp. blueberries
1 tbsp. coconut flakes
1 tbsp. almonds, chopped
1/2 cup coconut milk (optional)
maple syrup (optional)
Directions:
Rinse barley. Add to slow cooker with almond milk and water. Cook for 25-30 minutes.
Stir in goji berries, and cook for 5 more minutes, or until berries have softened.
Top porridge with coconut flakes, almonds, coconut milk, and maple syrup. Serve.
