Dark Chocolate Red Wine Truffles

Ingredients:
  • 1/2 cup coconut milk
  • 1/4 cup coconut oil
  • 10 ounces dark chocolate
  • 1/4 cup full bodied red wine
  • pinch of salt
  • 1/4 cup cocoa powder

Directions:
  1. Heat coconut oil and coconut milk in a double boiler on low heat. Stir until well mixed.

  2. Add chocolate, taking care not to let the mixture get too hot

  3. Immediately after the chocolate is melted, add wine and stir very well.

  4. Pour mixture into a baking dish and refrigerate until partially set. Once cooled, use a spoon to scoop out chocolate and form into balls with your hands.

  5. Roll truffles in cocoa powder to coat. Place on parchment paper, and allow to set in the refrigerator.
