Vegan Green Goddess Dressing

Ingredients:
  • 1 clove garlic
  • 7-8 tbsp water
  • 1/4 cup extra virgin olive oil
  • 1 medium avocado
  • 1/2 cup chopped green onion
  • 1 handful fresh basil
  • 1 handful fresh parsley
  • 5 tbsp apple cider vinegar
  • the juice of one lemon
  • a pinch of salt

Directions:
Add all ingredients to a blender and blend until smooth.

This is traditionally a salad dressing, but we love it as a dip, spread in a sandwich, or drizzled over roasted veggies too!
