Organic Spelt Pancakes

 Servings:  6 people  

  • 1 c whole spelt flour
  • 1/2 cup oats
  • 3 tbsp sugar
  • 1 cup milk or rice milk
  • 2 eggs
  • 1/4 cup melted butter
  • 2 tsp baking powder
  • Dash salt
  • 1 tsp vanilla
  • Fresh grated ginger to taste

1) Preheat a griddle or frying pan.

2) In a large baking bowl, mix dry ingredients together with a fork or whisk. Make sure there are no lumps from the baking powder and that everything is really evenly distributed.

3) Whisk wet ingredients together with at least a tsp of fresh grated ginger and fold into dry. Batter should be rather thick and lumpy.

4) Spread heaping tablespoons of batter onto a well greased pan. Flip when the sides look like they’re done and the middles are bubbling.

Serve with fresh summer berries and maple syrup.
