Pack and Go Lunch Salad

Ingredients:
  • 1 c left over, prepared rice
  • 1 c mixed salad greens
  • 1 beet grated
  • 1/2 can black beans
  • 2 tbsp salsa
  • 1 carrot grated

Directions:
1)Stir rice and beans together with salsa. Pack into one container.
2)Pack salad greens, grated beet, carrot and peppercress into another container.
3)If you don’t have a refrigerator at work, add an ice pack to your lunch kit. At lunch time, dump the beans and rice on the greens and toss.
