Vegetarian Curry

 Servings:  4 people  

  • 1tbsp coconut oil
  • 1 chopped onion
  • 2 cloves minced garlic
  • 2 tsp curry powder
  • 2 14 oz cans coconut milk
  • 4 large tomatoes
  • 19 oz cooked lentils
  • 1/2 tsp salt
  • Fresh cilantro for garnish

1)In a large skillet, heat oil. Sauté onion and garlic until soft. Sprinkle with curry powder and add coconut milk. Bring to a low boil and reduce, stirring often for 5 to 10 minutes.
2)Coarsely chop tomatoes; rinse and drain lentils.
3)When most of the liquid has evaporated, stir in tomatoes and lentils.
4)Sprinkle with cilantro.
