Black Beans & Rice

  • 1 cup rice
  • 3 tbsp. coconut oil
  • 3 garlic cloves, minced
  • 1 800ml can of tomatoes, chopped
  • 1 400ml can of black beans
  • 4 cups kale leaves, finely chopped

1)Cook the rice according to the instruction on the package. As it is cooking, add the oil to a large frying pan. After the pan is hot, add the garlic and fry it until it turns golden.
2)Add the kale, tomatoes and beans and cook for 3 to 5 minutes, stirring occasionally. Be careful not to overcook the kale, which should remain crunchy.
3)When the rice is cooked, fluff it with a fork. Combine the kale mixture with the rice and mix it together well.
