In 2002 Thompson went on to obtain a Bachelor of Music degree in classical guitar performance and spent several years performing around Western Canada. Four years later, he received a Bachelor of Education and began teaching and eventually would take a two-year hiatus from both cooking and teaching to pursue a musical dream that culminated in a Grammy Award nomination in 2010. After an 8-month food exploration trip, Thompson decided to pursue cooking seriously and in 2007 enrolled at Pacific Institute of Culinary Arts (PICA), and received a diploma in culinary arts and his level 2 Wine and Spirit Education Trust designation.
From 2008 to present, Thompson has worked at several prestigious restaurants in Vancouver namely Bishop's, Il Giardino, Nu, Westwood Plateau Golf and Country Club and is a teaching chef instructor in School District 36.Thompson has been a guest judge at numerous provincial high school cooking competitions, featured in EAT Fraser Valley CTV Master chefs Competition, was an onlinespokesperson for Pacific Institute of Culinary Arts (PICA), a featured chef at the BCSPCA Unleashed Gala 2014 and has worked along side internationally famed food stylist Nir Adar, worked with Food Network celebrity chefs Laura Calder, Bob Blumer, Chuck Hughes. Thompson can also be found at the Dairy Farmers of Canada “All You Need is Cheese” counter at both EAT Vancouver 2015 & the West Coast Women’s Show 2015.
The Wooden Boat was born from a personal family history from war torn Vietnam. Chef's family, among many others narrowly escaped Vietnam, travelling on small wooden boats, surviving on pure will power, luck, and love. The Wooden Boat's product line is his way of sharing with all of you a taste from his past, combined with the inspirations we find through friends, family and the environment around us.
